As the blade is made from high-carbon steel (Shirogami #2), it is prone to rust.
After each use, hand-wash with mild detergent and thoroughly dry with a soft cloth.
2. Do not use a dishwasher or dryer.
High heat and harsh detergents may damage both the blade and the handle.
Always wash by hand and store in a dry place.
3. Avoid cutting hard or frozen items.
Kayaki knives are precision tools. Do not use them on bones, frozen foods, or hard shells, as this may cause chipping or damage.
4. Apply a thin coat of oil for long-term storage.
If the knife will not be used for an extended period, lightly oil the blade with food-safe oil and wrap it in paper or cloth to prevent rust.
5. Have the blade professionally sharpened when necessary.
To maintain optimal performance, we recommend using a trusted sharpening service or a skilled craftsman.
